Grilled flatbread

Nothing is better than freshly cooked bread. Grilled flatbreads are an ancient food that are common in many cuisines. These go well with kebabs and can be used as wraps for many dishes. As with all baking recipes this is best measured by weight, not volume. The dough is best made a day ahead, but can be done in a couple hours as well.

Grill set up:

  • Hot grill (or griddle) and warm zone for holding

Ingredients:

  • 500g Bread flour
  • 50g wheat flour
  • 1 tsp yeast
  • 1 tsp salt
  • 360g cold water
  • 30g EVOO

Combine and mix all the dry ingredients. Stir in the cold water and EVOO and knead the dough for about 7 minutes (you can use a dough hook and mixer for this). Ideally you should put the dough in the fridge overnight, but if you're pressed for time just let it rise for 1 hour, punch down and let rise for another hour. If you do the cold overnight ferment remove the dough from the fridge 2 hours before you plan on cooking it. Let it rise for 1 hour, then punch down and use a scraper or knife to divide the dough into 6-8 balls. Cover with plastic wrap and let the balls rise for another hour. Place the balls onto a floured cutting board and roll out to 1/4" thick with a floured rolling pin.

Let rest for 15 minutes, then throw onto an oiled hot grill or griddle for about a minute per side, then move to a warm zone and hold until ready to serve.

Variations:

  • Sprinkle the rolled out dough with Za'atar or sesame seeds
  • Use full fat Greek yoghurt instead of EVOO
  • Cook on an upside down wok, it works great!
