Forget steak sauce, this is the only thing you should put on beef, and it works well on plenty of vegetables as well. . I like to add arugula or another herbal ingredient to kick this up a notch. Mature arugula is best in this, but even baby arugula from a grocery store will add some complexity to the mix. This is a simple yet delicious sauce for beef (and all meats ).
In general I look at chimichurri as being a concept as much as it is a defined recipe. Classic chimichurri is garlic, parsley, salt, vinegar, oil, and pepper. The concept of it can be expanded to be much broader. So if you want to make something like a a rosemary based "chimichurri" for pork - go for it!

Chimichurri! 1 cup parsley 1 cup arugula (preferably not baby) 1/3 cup oregano 6-8 garlic cloves 4 small chilies 1 Tbl red pepper flakes 1 Tbl coarse salt 1 Tbl water 1/4 cup red wine vinegar 1 cup EVOO Dissolve salt in water and vinegar. Chop all dry ingredients together (chop very finely). Add to vinegar mix and drizzle EVOO in while stirring. Let sit for at least a few hours, preferably overnight.
